RICOTTA & ARUGULA TOAST TAPA

As much as I love cookies, chocolate and any other sweet things, I realized that there are also some really easy food preparations that are delicious. This one doesn't even need to be baked and is super balanced and yummy.

Thinking about my last summer trip to Spain, I realized how much I loved a tapas place, simple preparations but great combinations! So I wanted to make something based of what I got on the place.

Every tapa is unique, beautiful, little and shows its own perfection; but if I'm sure of something, it's that my favorite ones are the ones that involve cheese in some way. That's why I decided to prepare a ricotta and arugula toast tapa. 
You can make it in any size that you want, and bite size tapas are really cute and ideal for parties or reunions, but as I wanted mine for dinner, I decided to do it in a bread slice.

Ingredients:
Bread or toast slice.
Arugula leaves.
Ricotta cheese to spread.
Olive oil.


As many people just want to eat dinner really fast and not wait much until it's cooked, this is a really healthy options that is done in maximum 5 minutes.

First you have to toast the bread; I really recommend toasting the bread and not leaving it normal, because when it is toasted it doesn't break that easily when you put the other liquid ingredients. Then you spread the ricotta cheese on top, and place the arugula leaves. For an extra flavor, I recommend adding olive oil, which is very used in Spanish recipes and super healthy.
